Ingredients:
Lentils - 200 g
Smoked sausage or ham - 200 g
Onion - 1 pc.
Carrots - 1 pc.
Celery - 2 stalks
Garlic - 2 cloves
Vegetable broth - 1.5 litres
Laurel leaf - 1 pc.
Olive oil - 2 tbsp. l.
Salt, pepper - to taste
Parsley - to serve
Preparation:
Preparation of ingredients: Cut the onion, carrot and celery into small cubes. Chop the garlic finely. Dice the smoked sausage or ham.
Frying: In a large saucepan, heat the olive oil and fry the onion, carrot, celery and garlic until soft (about 10 minutes).
Add the cured meats: Add the sliced sausage or ham and cook for a further 5 minutes.
Boiling: Add the lentils, bay leaf and vegetable stock. Bring to a boil and cook over medium heat until the lentils are cooked (about 30 minutes).
Seasoning: Season the soup with salt and pepper to taste.
Serving: Spoon the soup onto plates and garnish with fresh parsley.
